Santoku - Maple Burl
A Japanese kitchen classic with a western twist. This Santoku has a double bevel edge (western style) and will suit a left or right handed person. The handle is a traditional 'Wa' style with bolster (front) in black paper micarta and vulcanised fibre spacers in front of a stabilised red maple burl handle. The maple wood that has been stabilized and dyed in-house. The stabilizing process impregnates the wood with an extremely durable resin - this makes the wood virtually impervious to water, warping or cracking and a lot more hard-wearing than natural wood. This Santoku comes with a 'saya' style sheath made of birch and lined with chamois leather to give the blade a snug, plush fit.
