7" Nakiri - Thuya Burl
Quietly versatile. Relentlessly sharp.
A compact yet tall blade that sits between a Nakiri and a Chinese cleaver, offering excellent board contact with a reassuring sense of authority. The 7" blade is made from AEB-L stainless steel — originally developed for razor blades and valued for its exceptional sharpness, toughness, and ease of sharpening. Fine, efficient geometry makes this a versatile medium-duty all-rounder, capable of handling almost any task in the kitchen.
The knife is finished with a western-style Velin handle in beautifully figured Thuya burl, secured with brass pins and a mosaic pin. Designed for everyday use and built to last a lifetime.
