As a keen hobby cook, I started out with factory made, western/European style knives. As I could afford them, I moved up the price range of some of the main manufacturers and started getting into Japanese style knives. And then I started making my own kitchen knives - I use them daily. Using a beautifully crafted knife adds to the enjoyment of the whole cullinary experience. My kitchen knives are a fusion of the elements I like in both European and Japanese styles. Practical and hard-wearing, if looked after, these kitchen knives will provide a lifetime of good use.
