Santoku - Maple Burl and Ebony
A Japanese kitchen classic with a western twist.
This Santoku has a double bevel edge (western style) and will suit a left or right handed person. The handle is a traditional octagonal 'Wa' style with bolster (front) in black paper micarta, a spacer in stabilized orange Maple burl in front of an oiled Ebony handle. The Maple wood has been stabilized and dyed in-house. The stabilizing process impregnates the wood with an extremely durable resin - this makes the wood virtually impervious warping or cracking, water resistant and a lot more hard-wearing than natural wood.
This is Santoku is a lightweight all-rounder that will serve well in any kitchen.
