This handmade 9" Velin chef knife is designed for the cook who values both beauty and performance — a working tool made to the standards of a collector's piece.
The blade is precision-ground from RWL34 — a premium Swedish powder metallurgy stainless steel renowned for its exceptional edge retention, outstanding corrosion resistance, and superb toughness. Hardened to 61HRC, it delivers the sharpness that serious cooking demands while offering the practical advantages of a stainless steel in a demanding kitchen environment. The blade features a flat grind transitioning to a subtle convex in the final 10mm before the edge — a geometry that promotes effortless food release while maintaining the precise cutting feel of a true flat grind.
The handle is crafted from stabilised Maple Burl — a material celebrated for its striking figuring and the depth and clarity that the stabilisation process brings out in the grain. No two handles are alike. A Paper Micarta bolster with integrated thumb relief sits at the transition point, designed specifically for the pinch grip — the natural hold of an experienced cook. Nickel Silver liners and pins complete the build. A rounded choil and softened spine mean the knife disappears in the hand during long prep sessions.
